What is a marinade?
Merriam Webster defines a marinade as “a savory usually acidic sauce in which meat, fish, or a vegetable is soaked to enrich its flavor or to tenderize it.” Basically, a marinade is an acidic sauce that adds flavor to the meat and breaks it down to make it more tender. In this recipe the mustard is what makes the sauce acidic and starts the tenderizing process.

How long should I marinate?
I want to make this clear, always marinate meat in the fridge, not on the counter! You can marinate for as little as 20 minutes, for tender meats such as seafood, or up to a day, for tougher cuts like beef and pork. I have found the perfect length of time for both chicken and pork is the length of time it takes to defrost this meal in the fridge! I will pull the marinated meat from the freezer the night before I want to cook it and it will be perfectly ready to cook the following evening!

What to serve with honey mustard marinated meat:
PAN SEARED GREEN BEANS with cream cheese mashed potatoes.
A side salad with BALSAMIC VINAIGRETTE and loaded potatoes.

When to eat marinated meat:
Honestly, every day of the week would be good with me! Marinades are so easy to throw together and I will often do this the day I buy them from the grocery store! I’ll get home, throw a few marinades together for my chicken, pork, and sometimes steak , and put them in my freezer for when I need them! Honey mustard marinade would also be perfect for a date night in! It is full of flavor and tastes like you spent hours working on it! Want to wow dinner guests? Honey mustard marinade! Ingredients
- 2T avocado oil
- ¼ c honey
- 2T seedy Dijon mustard
- 2T smooth Dijon mustard
- 5 cloves garlic, minced
- 1t salt
- ½ t black pepper
- ½ t parsley
- ½ t marjoram
- ½ t thyme
- ½ t basil
- ½ t oregano
- ¼ t red pepper flakes
- 2-3lbs meat
Directions
1.Label your freezer bag!!!! You WILL forget what is in there!

2.Set up your zipper freezer bags so they will not spill while you are filling them. I LOVE these bag holders! (I personally don’t like to use reusable bags for raw meat, but to each their own.)

3.Pull out all of your marinade ingredients, measuring spoons, and garlic press! Trust me, with everything ready to go, this marinade will take a matter of minutes to pull together!

4. To your bag add the avocado oil, honey, seedy Dijon mustard, smooth Dijon mustard, minced garlic, salt, black pepper, parsley, marjoram, thyme, basil, oregano, and red pepper flakes.
5.Next, place your raw meat in the bag, then wash your hands.

6.Close the zipper top and massage the bag until the ingredients cover every aspect of the meat.

7.Let marinate in the fridge for at least 4 hours, up to 24 hours, or freeze flat.
To Cook:
1.Pull marinated meat from the freezer the night before cooking time. Let it defrost in the fridge approximately 24 hours.

For pork tenderloin:
1.Preheat oven to 425F.
2.In a cast iron skillet turn the heat to medium and let the pan get hot. Place the pork into the hot pan to sear for 3-4 minutes per side.


3.Transfer to a baking sheet and bake at 425F for 20-30 minutes. Test the temperature of your pork and cook until the internal temperature of the thickest point is 145F.


For chicken breasts or thighs:
1.In a cast iron skillet turn the heat to medium and let the pan get hot. Place the chicken in the hot pan and cook for 6 minutes per side. Cook in batches and do not overcrowd the pan.
